You had said Holland Farms started out as a dairy bar in 1955, can you explain what a dairy bar was?
"My Grandfather started the business, he originally started a milk route where he bottled and sold his own route. So, it started as a milk business. They delivered, he and his wife delivered milk and bread to homes in the area and then in 1955 he opened the store. The store was actually down the street (from today’s location). They put the bypass that goes around commercial drive and it was on that corner, around that "Y". So they made him move it, so he bought this piece of property and built it here. So a dairy bar is milk products.

When did the business evolve into more of a bakery?
"In 1955, he was delivering milk and bread before that and then in 1955 when he built the store, he hired a dutch baker and started producing the baked goods. He always had the whole dairy bar as well. "

When did the Half-Moons start being sold and why were those chosen specifically?
"I don’t have an exact date but early on, I would say in the 1950s-60s, he started making them. We’re a bakery so that was one of many products we’ve always had that as one of many products and that one’s always been really popular that kind of stuck in this area, in the Mohawk Valley. I think in the Mohawk Valley is where the Half-Moons started."

How many variations of the Half-Moon do you have in store?
"It changes, we just started a new one this week. I would say anywhere from nine or more on any given moment, but when I say that there’s a chocolate and white variation of each one. So you’ve got the traditional one, with the white bottom or chocolate bottom, then you’ve got a coconut that we do on a whote and a chocolate bottom, so I mean anywhere from nine to 20 variations."

Do you have a favorite Half-Moon flavor?
"I actually don’t have a specific but what sticks out is the traditional with the chocolate bottom or the chocolate on chocolate which is called a New Moon, and then also a pumpkin chocolate chip, I would say sticks out."

Do you think there's a specific reason the Half-Moon remains so popular?
"I can speak for us only, I think it’s a tradition in our area but I think why we’re so popular is that we have quality products. My grandfather always said you have to have quality ingredients. It's about quality and good ingredients, not the cheapest ingredients. Quality products at a fair price. That’s why we are so successful, I believe."
